How to prepare Mutton Korma

INGREDIENTS

  • Total Time: 30 mins
  • Preparation Time: 20 mins
  • Serves: 4
    • Mutton – 1 kg
    • Onion – 4, medium – big sliced
    • Green chilly – 5, slit lengthwise
    • Crushed ginger & garlic – 1 – 1.5 tbsp, each
    • Cinnamon – 1 big piece
    • Cloves – 4
    • Cardamom – 4, bruised
    • Fennel seeds – 1 tsp
    • Poppy seed – 1 tbsp (optional, I didnt use)
    • Whole black pepper – 1 tsp
    • Coriander powder – 1 tbsp
    • Turmeric powder – ½ teaspoon
    • Cashew nuts – 8-10 (soaked in warm water for 10-15 mins)
    • Coriander leaves – for garnishing
    • Thick coconut milk – 1½ cup
    • Vinegar – 2 tsp
    • Oil – I used coconut oil
    • Salt – to taste
    METHOD OF COOKING:
    • In a pressure cooker heat oil. Just add cloves, cinnamon, cardamom, black pepper and fennel seeds. Fry for about two mins.
    • Add sliced onion. Cook until its brown. Just add some crushed ginger garlic and green chilli. Cook it for about 2-3 mins until raw smell goes off.
    • Add coriander and turmeric powder. Mix it well and cook it for about 3-4 mins. Add poppy seeds if your using and cook for 2-3 mins. Remove masala from gas and allow it cool. Grind the cooled masala with ¼ – ⅓ cup water to a smooth paste.
    • Grind soaked cashews to smooth paste and keep it separate.
    • Add vinegar, salt , ground paste and ¾ – 1 cup water to cleaned mutton and mix well. Pressure cook mutton until its done. Once pressure comes down just open cooker and mix well. Add cashew paste on to the mutton and cook well for about 3 to 4 mins.
    • Add ground paste, salt, vinegar and 3/4-one cup water to be cleaned mutton and mix it well. Pressure cook mutton until its done
    • Once pressure comes down, open the cooker and mix well. Add cashew paste to mutton and cook about 3-4 mins. Add thick coconut milk and mix once again. Cook it on low flame for about 6-8 mins. Add chopped coriander leaves and mix once again.
    • Allow the curry to rest for about 20 to 30 mins, as the flavour to settle in.
    • Serve it with ghee rice, plain rice, tomato rice, veg pulao, appam, parotta, idiyappam and many more.
