How to prepare Mutton Ghee Roast

INGREDIENTS

  • Total Time: 1 hr 20 Mins
  • Preparation Time: 20 Mins
    • Mutton: 1 kg
    • Ghee or clarified Butter: 3 tbsp
    • Ginger Garlic Paste: 1 tbsp
    • Turmeric powder: 1/2 tbsp
    • Salt to taste
    • Water
    • Kashmiri Chilli: 10 nos
    • Coriander Seeds: 1 tbsp
    • Cumin seeds: 2 tbsp
    • Fennel seeds: 1 tbsp
    • Dry red chillies: 6-7
    • Cinnamon stick: 1
    • Cloves: 4
    • Star anise: 1
    • Ginger: 1 inch
    • Cloves of Garlic: 2
    • Lemon juice: 1 tbsp
    • Water: 4 tbsp
    • Ghee / Clarified butter: 1/4 cup
    • Yogurt / Curd: 2 Tbsp
    • Curry Leaves for Garnishing
    • Salt to taste
    METHOD OF COOKING:
    • Into pressure cooker melt ghee, just add ginger garlic paste and turmeric powder. Mix it well and then add mutton pieces and some salt and saute it well in ghee for about 3 to 4 mins. Add some water not too much just to cover the mutton pieces. Cook it up for 4 to 5 whistles on medium heat or until the meat to be cooked tender and soft. Transfer the broth in a bowl.
    • Reason we are separating the pieces from liquid is to make mutton roast not mutton gravy and the same time we dont waste this broth as we are going to add to be at masala and reduce it and then we are going to add masala and reduce it and we are going to add mutton pieces which will be easily roasted and retain up all the flavor.
    • In order to make Masala for Mutton Ghee roast, Dry roast Kashmiri chilies (Kashmiri Chillies said to add a nice color to the recipe at the same time as they are stated to less spicy) If you dont like Kashmiri Chillies which will replace this for about 4-5 regular chillies). After 3 mins roasting transfer it to a plate and roast the other spice Coriander seeds, Fennel seeds, pepper corns, Cloves, Cumin seeds, Cinnamon, star anise and dry red chillies and roast it for some time until a nice aroma for roasted spices and just be careful not to burn up them.
    • Transfer all roasted spices to a blender and blend along with a piece of Garlic. Ginger and lemon juice and grind it to a smooth paste by adding water.
    • In order to prepare Mutton Ghee roast just melt some ghee into pan and add ground masala and add yogurt to it and mix it well with ghee. Now add broth which is said to have separated starting and mix it well with masala. Add some salt if needed. We need to cook until gravy reduces and thickens.
    • Now you can able to see gravy to be thick and nice, ghee to be added which has oozed out now its time to add cooked mutton pieces and mix it well with gravy. After mixing up nicely just cook it for about 4 to 5 mins into a medium heat. Finally add some curry leaves for garnishing and turn off heat.
    • Our Delicious Mutton Ghee roast is ready to be served.
