How To Cook Mutton Masala

INGREDIENTS

  • Total Time: 5 hrs
  • Preparation Time: 4 hrs
    • 300 grms boneless mutton / 500 gms lamb with bone mutton.
    • 2 tbsp curd/yogurt
    • 1 1/4 tbsp ginger garlic paste
    • 1/2 tbsp salt
    • 1/4 tbso turmeric
    • 1/2 tbsp red chilli powder
    • 1 1/4 to 1/2 tbsp oil.
    • green cardamoms: 2 nos
    • 1 inch cinnamon stick ( if using Ceylon cinnamon 2 inch)
    • 1 cup fine chopped onion.
    • 1/4 cup tomato puree (1 large deseeded)
    • Green chilies slit 1
    • 2 teaspoons meat masala
    • 1/2 + 2 tablespoon water
    • 1 large sprig curry leaves or bay leaf
    • Coriander leaf for garnish.
    METHOD OF COOKING:
    • Marinate mutton with ingredients mentioned under marination. Refrigerate the mutton at least 2 hours overnight. Overnights works the best.
    • Just keep the meat in refrigerator for about 30 mins before cooking.
    • Heat oil into a pan and saute cardamom and cinnamon for 2 mins.
    • Add onions and saute until golden brown. Lower the flame as much as possible. Add marinated meat and saute again for 5-7 mins.
    • Cover the meat for about 10 mins. When you see moisture starts to release then add meat masala and saute again for another 2 mins.
    • Add curry leaves and saute it again for about 2 mins.
    • Add tomato puree and saute it for 5-7 mins till the raw smell goes away.
    • Add water and pressure cook for 3 to 4 mins in a medium flame. You can also cook the mutton masala in pot until its tender and soft
    • When pressure goes down, stir and simmer if the curry is runny
    • Serve mutton masala with rice, roti or paratha.
